Thought I would send you a couple of recipes for our web site. That site is really looking good. What fun!

The first recipe is a dutch oven meal. I first found it in a Kansas Canoe Association newsletter. One of their members had put it in. His name is T.J. Hittle so the name of the recipe is

T.J.'s Gringo Pie

Here is the recipe:

4 # Charcoal
3 # sausage or hamburger
24 oz. tomato sauce
1 onion- -chopped
1 pepper- - chopped
16 oz. whole kernal corn
2 cans Rotel diced Chilies & tomatoes
1 # Grated Cheddar Cheese
1 pkg. corn tortillas
1 1/2 boxes corn bread

1. Brown the meat, onions and peppers.
2. Drain
3. Stir in tomato sauce, corn, and Rotel
4. Layer in Dutch Oven ' meat sauce, cheese, tortillas
5. Top with cornbread mix: use package directions
6. Bake in Dutch Oven. Coals- - about 10-15 on top; 8-12 on bottom
7. Bake until cornbread is done.

 

Here is a favorite dessert of mine. We had it when we were in the Grand Canyon in 1995. Another Kansas Canoe friend of mine shared the receipe. I have a note that says he got it from the book

Cooking the Dutch Oven Way.

It is called Memphis Molly.

1 can unsweetened crushed pineapple- - drained
1 can tart cherries- - drained
Mix fruit together in the bottom of a Dutch Oven.
Put 2 boxes of Jiffy Yellow Cake mix (dry) on top of the fruit.
Do not stir in with fruit.
Add one stick of butter- - cut into pats and spread out on top of the mix.
Bake at 350 degrees for 25 minutes.

Other fruits can be used...another good one we had was blackberries and peaches.
