To cook fish over an open fire all you need is a cast iron skillet,
cooking oil, and a spatula.

First put the skillet over the fire. Then pour in the oil. I use enough
to completely cover the fish. Wait until the oil is hot enough. To check
this I usually take a drop of water and drop it in the oil. If the oil
bubbles its hot enough. Then put in the fish. They are done when they
turn clear to white and are flaky.

Gerry- a another variations might be using a mixture of spices mixed with flour. Try taking a plastic bag and mix flour, lemon pepper, season salt, cajun spices or whatever with your fish fillets. Fry in the skillet and enjoy your savory meal.
